Bravo Network's hot television show "Top Chef" moved into the finals last night with the last four chefs competing for the coveted title. Transported to the beautiful island of Puerto Rico, Antonia, Lisa, Richard, and Stephanie continued to pull out all of the stops in hopes of impressing the judges.

On Friday the 11th, for one day only, we will be featuring two New Belgium Lips of Faith series beers: Vrienden (collaboration with Allagash) and Sahti. These beers will be paired with cheese and patrons will receive a slow cooker pork belly free New Belgium glass.

Stephanie mixed her plantain tortone with seared tuna for one variety and made a slow cooked pork belly and shrimp fritter with brown butter, basil, and lime for the other.

Most all environmentalists start out just doing one thing because they know it's a good cause, it's easier or, even more common, because it saves money. I was one of the latter -- everything I did that was green, I did it to reduce the impact on my pocketbook.

Eat less meat. I knew the impact of a heavy meat diet, but I love meat and the idea of vegetarian meals was off-putting for me. Until it occurred to me that I could make a lot of the foods we already eat meatless: spaghetti, tacos (mmm bean and cheese tacos!), homemade slow cooker mac and cheese chili. Not only did having one or two meatless meals a week help me meet my frugal grocery budget, it also opened my eyes to the fact that meatless doesn't = tofu.

Behavior - Some behavior is learned and other behavior is a manifestation of someones natural feelings & tendencies. Some bad behavior may be reinforced inadvertently. If a child won't try a new food is it because he has had past experiences with trying new foods, i.e. made him nauseous, made him gag? Is it because he needs to have control over what he puts in his mouth i.e. suspicious of the foods presented to him? I have used a combination of the following vegetables: red and yellow onion, red, green, or yellow bell pepper, zucchini, mushrooms, and asparagus.

Dill has a mild flavor similar to that of caraway seeds. It is generally used with fish dishes, such as smoked salmon or prawns. Also good with potato soup and potato salad, with cabbage and in egg dishes.

Stewing is another combination cooking technique. Stewing is one of the easiest cooking methods you can attempt. All the ingredients are simmered in a liquid shin of beef ragu hugh an extended length of time until tender.

At the first sips the wine tasted of lemon. It had moderate acidity and was fairly short. Its first pairing was with slow cooker ragu ribs accompanied by sliced potatoes and a tomato, onion, lime, cilantro and green pepper salsa that was more spicy than I would have preferred. The acidity was fine for the meat and potatoes and there was a little bit of lemon. The wine and the meal didn't really gel - I don't blame the wine for not succeeding in a non-traditional pairing. Dessert was orange-flavored fruit candy; things worked better. The dominant taste was almonds and there was some honey as well.

The next meal was chili with rice and okra that had been stewed in tomato sauce and coriander. When it accompanied the meat, this wine's caramel was predominant. Now its acidity was well balanced with light tannins. The delicious okra rounded out the caramel and the wine seemed slightly more tannic which was not a problem. After I added lots of ground chili peppers to the meat dish the Grenache/Shiraz became more intense. The caramel stepped back to make room for black fruit. I don't know about you but I would rather taste black fruit than caramel beef ragu pasta in my dry wine. Dessert was fresh honeydew and the caramel taste was in the saddle.

A previous column discussed the first local Aldi store to open (in Delray Beach), and the merits of driving from anywhere in the county to save considerable money.



The first cucina povera dinner begins Sunday, May 31st and Monday, June 1st showcasing cuisine from Lazio. It includes spaghetti cacio e pepe, moroccan lamb tagine slow cooker with lemon and egg, and torta di contadino with cherry conserva. Dishes are subject to change based upon availability.

I will admit that I do not go the whole hog when I prepare the vegetables, but I do like to cut a few of them in some fancy way, just to give the diners a surprise and bring an unexpected smile to their faces. So, here are six of my top tips for the preparation of your culinary delight.

For example, have you ever considered colour coordinating your fruit bowl or cutting the vegetables up like you often see in Chinese restaurants in the shape of animals or flowers. It does look good, doesn't it? It really is not all that difficult either when you know how slow cooked moroccan lamb or you have the right cutters.

Chili with Beans? This is often a controversial topic. The mere thought of using beans in a chili dish brings up the ire of a lot of people. After all, chili is often referred to as Chili Con Carne (Chili with Meat) but rarely as Chili Con Frijoles (Chili with Beans). But just as there are chili recipes with no beans, there are just as many recipes that include beans that turn out very delicious.

The vegetarian crock pot retains almost all the nutrients of food, yet produces a spicy and savory dish. This cooking appliance is ideal for people struggling to become vegetarians. The heavenly flavor of vegetarian crock pot recipes can effectively make them forget meat. You can successfully switch to a complete vegetarian diet with food cooked in a slow cooker.



This delicious Mexican casserole is easy to make and you can make it in the crockpot. Since this only has to cook for five hours, you can start it after lunch and it will be ready at dinnertime.

Chili peppers, water and cubes of beef are the basic ingredients to make slower cooker chili, but you can add tomato paste or tomato sauce if you like the taste, since this thickens the dish as well as giving it a richer flavor. Cumin can be used to add a smoky taste. You might want to add some hot sauce too, if the chilies do not make it hot enough for your palate.

You can either set your food to slow-cook, before leaving for work, or -- if your slow cooked chili has a program setting, like the Hamilton Beach 33967 -- you can just program it to be finished at the time, you want.

Shellfish does not combine well with long cooking times, so if you want to add some to a stew or soup recipe, add it near the end of the cooking time so it can warm through. Shrimp can be added to crockpot chowders, soups or stews. You can either add them in their shells or de-shelled. Gumbo and jambalaya are slow cooker chili and you can add some tasty shrimp to these, whether you make them on the stove or slow cook them. Clams and mussels are good for making stews, especially when you use a tomato or white wine based sauce.

Place chicken in slow cooker. Mix remaining ingredients and pour over chicken. Cover slow cooker and cook on low for 8 hours or high for 4 hours. This is perfect with rice or noodles.
